Why are we called Kabanoki?

The name KABANOKI, comes from the technique that Carlos Navarro presented at the 2016 World Sushi Championship held in Tokyo, where he was a finalist with special mention from the jury. The Japanese meaning of KABANOKI is a nod to his second Swedish surname BJÖRK, which both translate into Spanish as ABEDUL.
